Botulism Warning
Botulism is a
rare, but, serious paralytic
illness caused by a nerve
toxin that is produced by the
bacterium Clostridium
botulinum.
Botulinum neurotoxins (BoNTs)
block the release of
acetylcholine at the
neuromuscular junction
causing serious neurological
disorders and flaccid
paralysis. BoNTs have an LD50
(Lethal Dose to
50% of an exposed
population) for humans in the
range of 0.1-1 ng kg-1
Covering foods in oil may
provide the anaerobic
conditions required for the
production of botulism toxin.
Refrigeration and the
addition of 10% by volume of
white table vinegar to the
finished product will help to
prevent bacterial growth;
adding a small amount of table
salt can further enhance
this.
